Most of us don’t live in the Médoc in France, nor have unlimited resources to throw at our cellar, much less walk around with our personal sommelier.
In consequence, we order wine, or we open a bottle at home, and is not that good. It may be too sweet, or too tanic, and may mess up our GI tract. But we keep doing this over and over again. Why?
The reason may be just that, every once in a while, we get that special glass of wine. The one that is perfect for the occasion and the company. The one that pairs perfectly with our meal.
We live the rest of our lives in the expectation of a moment like that, and as a result we end up drinking a lot of mediocre wine. This is the same routine gamblers go through. They just have to win once to feel that they can always do.
Most of us don’t need things to be perfect every time. Some of the time will do, and we’ll keep at it.
